Try three tasty mug cake recipes

WARNING: When using a microwave get a grown-up to help you as the mugs and cake will be very hot! These cakes are very delicious but make sure you let the cakes cool down before digging in so you don't burn yourself!

1. Cinnamon Swirl Mug Cake 🧁

This is a scrumptious and soft mug cake with sweet cinnamon swirls. This bake is definitely tasty with a capital T! 

What you will need for the Cinnamon Swirl Mug Cake:

For the cake:

  • 60g (6 tbsp) - Plain (all-purpose) flour, heat-treated (see bottom of page for guide on how to heat treat flour)

  • 45g (3 tbsp) - Granulated sugar

  • 1/2 tsp - Baking powder

  • 60ml (4 tbsp) - Water

  • 40ml (3 tbsp) - Oil or melted butte

  • 1/2 tsp - Vanilla extract

For the cinnamon swirl:

  • 1/2 tbsp - Melted butter

  • 1 tbsp - Light brown sugar

  • 1/4 tsp - Ground cinnamon

     

For the cinnamon sugar:

  • 1 tsp - Granulated sugar

  • 1/8 tsp - Ground cinnamon

Recipe for Cinnamon Swirl Mug Cake:

For the cake and cinnamon swirl:

  1. Grab a small mixing bowl and put all the ingredients for the cake and mix together until smooth.

  2. In another small bowl, mix together all the ingredients for the cinnamon swirl.

  3. Pour half the cake batter into a large microwavable mug, or split between two smaller mugs if making two.

  4. Add a spoonful of the cinnamon swirl mix on top of the batter.

  5. Then pour over the remaining cake batter on top of the cinnamon swirl and smooth it out.

  6. Then spoon the rest of the cinnamon swirl on top making a spiral type pattern.

  7. In another small bowl, mix together the sugar and cinnamon to make the cinnamon sugar, then sprinkle this on top of your mug cake.

  8. Place the cake in the microwave on medium for one minute and 20 seconds, or until you poke a knife or toothpick in and it comes out clean.

  9. When cooked make sure you leave it to cool for a minute as it will be very hot. Once cooled, dig in and enjoy!

(TOP TIP: Make sure to keep an eye on your mug cake when it's in the microwave and check at around the minute mark so it doesn't overflow!)

2. Pink Doughnut Mug Cake 🍩

Try this soft, spongey and vanilla-y mug cake, topped with a simple sweet glaze and lots of delicious sprinkles!

What you will need for the Pink Doughnut Mug Cake

For the cake:

  • 40g (4 tbsp) - Plain (all-purpose) flour, heat-treated (see bottom of page for guide on how to heat treat flour)

  • 30g (2tbsp) - Granulated sugar

  • 1/2 tsp - Baking powder

  • 40ml (3tbsp) - Warm water

  • 25ml (1 1/4 tbsp) - Oil or Melted butter 

  • 1/2 tsp - Vanilla extract

For the glaze:

  • 15g (2 tbsp) - Icing sugar

  • 1 tsp - Milk

  • Pink food colouring (optional)

  • Sprinkles - to decorate 

Recipe for Pink Doughnut Mug Cake:

For the cake:

  1. Put all the ingredients for the cake into a small bowl and mix together until it's all combined and there are no lumps.

  2. Once mixed, pour the cake batter into a microwave mug or split between two smaller mugs if making for two.

  3. Microwave on medium for one minute and 20 seconds, or until you poke a knife or toothpick and it comes out clean.

(TOP TIP: Make sure to keep an eye on your mug cake when it's in the microwave and check at around the minute mark so it doesn't overflow!)

For the glaze:

  1. When your mug cake is baking in the microwave, grab a small bowl and mix together the icing sugar and milk until smooth. You can also add a very small amount of food colouring here if you want to add some colour to the glaze.

  2. When the cake is cooked, pour the glaze over the warm cake, smoothing it out to the edges. Then scatter over some sprinkles to decorate.

  3. Make sure you let it cool for a minute as it will be very hot! Once cooled, enjoy!

3. Lemon Drizzle Mug Cake 🍋

Try baking this soft, sweet and zesty mug cake which is super lemony and topped with a delicious crunchy lemon drizzle!

What you will you need for Lemon Drizzle Mug Cake:

For the cake:

  • 45g (4 1/2 tbsp) - Plain (all-purpose) flour, heat-treated (see bottom of page for guide on how to heat treat flour)

  • 45g (3 tbsp) - Granulated sugar 

  • 1/2 tsp - Baking Powder

  • 30ml (2 tbsp) - Milk

  • 30ml (2tbsp) - Lemon juice 

  • 30ml (2tbsp) - Vegetable oil

For the drizzle:

  • 2 tsp - Lemon juice

  • 15g (1 tbsp) - Granulated sugar

Recipe for Lemon Drizzle Mug Cake:

For the cake:

  1. In a microwaveable mug add the flour, sugar and baking powder and mix them together.

  2. Add in the milk, lemon juice and vegetable oil and mix until smooth.

  3. Microwave on medium heat for 1 minute 30 seconds, or until a knife is inserted into the middle of the cake comes clean. 

(TOP TIP: Make sure to keep an eye on your mug cake when it's in the microwave and check at around the minute mark so it doesn't overflow!)

For the Drizzle:

  1. While the cake is in the microwave, in a small bowl mix together the lemon juice and sugar until smooth.

  2. Once the cake is cooked, pour over the drizzle mixture. Leave to cool for a minute before eating as it will be very hot!

How to heat-treat flour in the microwave and in a pan

In the microwave:

  1. Put the flour onto a microwaveable plate and microwave on medium to high heat for one and a half minutes, stirring every 20 seconds, until the flour is hot throughout.

  2. Leave the flour to cool until it's room temperature before use. 

In a pan:

  1. Put the flour into a heavy frying pan and warm over a medium heat for four to four and a half minutes, stirring to make sure the flour doesn't burn on the bottom of the pan. 

  2. Leave the flour to cool until it's room temperature before use.
